It’s the time of year for family gatherings and fun side dishes, which means it’s the perfect time of year for some roasted asparagus and some zesty horseradish whipped feta!

I have a list of recipes constantly brainstorming in my head, coming up with fun ways to make naturally gluten free foods that are just as beautiful and delicious as any other recipes. I also know it can be a challenge to find new recipes to serve family and friends at holiday gatherings. Personally, I’m not a fan of the traditional casseroles and 7-layer-dip stuff. I like simple, healthy recipes that plate beautifully, give you a chance to really appreciate flavor, and leave you feeling great!

This asparagus and whipped feta dish checks all of the boxes: easy, flavorful, healthy, and beautiful. The creamy feta contrasts so perfectly against the crispy asparagus… it’s just too good!

The Best Blistered Asparagus

It might be strange to hear me say that this asparagus is like eating candy… but it is. It’s so crispy, buttery, and salty that it’s perfectly addictive and a sure crowd pleaser. I like to use extra thin asparagus to help it get nice and crispy and also because it looks extra beautiful when plated over the whipped feta. Make sure to use a big enough baking sheet so that the asparagus can be spread out–this is the key to getting it nice and crispy. Use two baking sheets or bake in two batches if needed. Trust me, it’s worth it!

Horseradish Whipped Feta

You may have heard of whipped feta before–it’s such a delicious and easy way to add a touch of creaminess to a dish. Here I’ve added the zetsy twist of Bubbies Horseradish, which adds a bright flavor contrast that goes great with the charred asparagus. Asparagus and feta both have mild, agreeable flavors that provide fun opportunities to experiment, and horseradish is an easy way to do so without needing to source a long list of ingredients.

INGREDIENTS

For the asparagus:

  • 1 lb thin asparagus trimmed
  • ¼ cup olive oil
  • 2 cloves garlic minced
  • ¼ tsp salt
  • ¼ tsp pepper

Whipped Feta:

  • 8 oz feta
  • ¼ cup plain greek yogurt
  • 2 tbsp horseradish
  • 2 tbsp olive oil
  • Lemon zest for garnish
  • Flakey sea sat for garnish

INSTRUCTIONS

  1. Preheat the oven to 425 F and line a baking sheet with parchment paper. Lay the asparagus evenly on the baking sheet and drizzle with olive oil. Toss with garlic, salt, and pepper to combine, making sure that the asparagus are somewhat spaced apart so they’ll crisp up in the oven
  2. Place the asparagus in the preheated oven and roast for 10-15 minutes, or until asparagus is crisp and well roasted.
  3. Combine feta, yogurt, horseradish, and olive oil in a food processor and blend for 30 seconds-1 minutes, until well combined and smooth. Spread the whipped feta on a platter and top with the roasted asparagus. Garnish with lemon zest and flakey sea salt.
