I’m not a fruit person at all. I think it’s from years of no sugar or virtually anything sweet due to being gluten free (Ive stuck to meat and veggies instead of gluten free waffles). But, I love blueberries on this smoothie bowl. It just feels right. Post-workout I need something with a good amount of carbs in it, and I get a little tired of just sweet potato. I try using white and purple sweet potato to mix it up, but a potato is a potato. Ya know? You can’t put lipstick on that pig.
Speaking of pigs, I bought bacon, brought it home, and realized it was turkey bacon. I’m not anti-turkey bacon, but that realization hit me where it hurt. I don’t do well with rude awakenings like that. Anyways…
How was your weekend? What did you binge watch? I cooked sssoooo much food for you guys, which means I watched 2 seasons of Suits. I finally got Amazon Prime (because I live a decade behind normal trends) which has unlocked an overwhelming door of new shows. I dropped Suits back when I moved away from my parents – somewhere around season 5 – and then watched 3 episodes in Iceland. Iceland has pretty much nothing on their Hulu, except for Suits. Why do they get it and not us? They eat stupid stuff like fermented shark that smells like a dumpster.
So anyways, I’ve had a lot to catch up on in this show. In my world, Meghan Markle is still a paralegal and not a princess. Same great hair, though. What is it with celebrities and great hair. I mean I understand the money part, but it’s always so thick! Have none of them ever been stressed? Way back when I was 15 I had much thicker hair, but 7 years later it’s thinned considerably. As I work on gut health and managing anxiety I can see I’m losing less hair, but it’s certainly going to take a while to look the same again.
Which brings us to collagen! I’ve been using collagen in a bunch of my recipes, and try to have a serving of it twice a day. I’ve replaced most of my protein powder with it at this point. Collagen has made a stir in the health world, and for a good reason. If you haven’t tried it yet, it’s fantastic for gut health, glowing skin, thick hair, and soothing joint pain. I’ve especially noticed less joint pain in my knees and elbows since I started using it a few months back.

Chocolate Blueberry Collagen Smoothie Bowl
INGREDIENTS
- 1/2 cup cooked sweet potato, frozen
- 1/4 cup blueberries
- 2 scoops chocolate coconut collagen
- 1 tbsp cacao powder
- 1 cup almond milk
- 1 tbsp almond butter
- 1/2-1 cup ice cubes
- Toppings: coconut flakes, blueberries, cacao powder, almond butter
INSTRUCTIONS

Add all ingredients into a high speed blender and blend until smooth. Add more ice or more almond milk to achieve desired consistency.

Garnish with desired toppings and enjoy!
RECIPE NOTES
If you wan't to use an unflavored collagen, you can! you might just want to add another scoop of cacao and a bit of honey, or some extra blueberries to sweeten it.
