Chocolate Chip Collagen Bars

Chocolate chip collagen protein bars packed with healthy fats from almonds and coconut. These are Paleo, sugar free, and a perfect grab and go snack!

Happy Friday friends! I don’t know about you, but I am so ready for the weekend. I had a big shoot last weekend and spent the rest of it editing photos and sorting through contract language. Sounds like a fun time, right? It actually was, but it was also exhausting. I still need to do a lot of branding work this weekend and spend some time planning my NY trip, but at least that’s much more low key than running around a busy restaurant all day. 

 
I was in reminded again this week about how much we need to prioritize our health and take time to rest… even when were eating healthy. I ran out an extra time every day to go to PHX Start Up Week, on top of work, running my own business, and taking medication that destroyed my stomach and tanked my energy. On top of all that,  I didn’t sleep enough, and I ended up feeling miserable and nearly unable to function yesterday.  I wish rest wasn’t essential, but it is, and ignoring it only makes  things worse. So treat yo self to a solid 8 hours of sleep, my friend. And toss a few extra chocolate chips in your collagen protein bars. It’s all a part of balance. 

Chocolate Chip Collagen Bars

PREP TIME 5 minutes
COOK TIME 30 minutes
TOTAL TIME 35 minutes
SERVINGS 8 bars

INGREDIENTS

  • 1 cup almonds
  • 1/2 cup cashews
  • 1/2 cup coconut flakes
  • 3 scoops Primal Kitchen Vanilla Coconut Collagen
  • 3 tbsp cacao nibs
  • 1 tbsp coconut oil
  • 1/4 tsp Himalayan sea salt

INSTRUCTIONS

  1. Line a loaf pan with parchment paper.
  2. Combine almond, cashews, and coconut in a food processor. Blend until finely ground and beginning to clump together, about 2 minutes, Add in collagen, coconut oil, cacao nibs, and sea salt. Bend until the mixture begins to form a ball, about 2-3 minutes. Add additional oil or a bit of almond butter, if needed. 

  3. Press the mixture into the pan and  use the edges of the parchment to smooth the bars out evenly place in the freezer for at least 30 minutes. Cut into 8-10  bars and enjoy! I keep mine in the freezer until eating.
