A fruitless chocolate smoothie bowl packed with protein and sweet hints of cocoa is the perfect Paleo breakfast!
Guys guys guys guys guys. I finished my cookbook! What a hunk of an undertaking that was–let me tell you. Cook books just grow and grow the more you realize things you want to include (for example, a dips section or a conversion chart.) I also simultaneously started Restaurant Photography School and started pivoting my design business. So yeah, I’ve been tired. There’s been a lot of coffee this month.
My newsletter peeps found out yesterday and I was going to make you wait a little longer to hear the news, but The cookbook is called “Skillet Life” and it’s coming out on January 29th! I’ll do a more formal announcement as it get’s closer, but I just couldn’t wait to tell you a few of the details. The book has 23 complete meal recipes as well as 5 easy sauces and a guide on how to make skillet meals without a recipe! All of the recipes are Paleo, Gluten Free, Dairy Free, Grain Free, and easy to adapt to a Keto diet. I also included modifications so that all recipes can be nightshade free, nut free, and low FODMAP. This book truly is for everyone, and I can’t wait to show it to you! But for now, we have another collagen smoothie bowl! I took a break from these during the holidays while I was working on muffin and scone recipes, but now I’m back on the bowl train full-force. This has been my go-to lately. As usual, there is no fruit involved in this bowl, because we all know how I feel about fruit (specifically bananas.) Because of this, it’s really easy to make this fit your diet even if you eat low carb. I hate seeing how many smoothie recipes are just blood sugar spikes waiting to happen. Not in my bowl–no thank you.
This bowl is chocolatey, thick, and filling. All of the things smoothies should be, amIright???
Chocolate Coconut Collagen Smoothie Bowl (Fruitless)
INGREDIENTS
- 2 scoops collagen peptides
- 1 cup coconut milk
- 1 tbsp honey or 10 drops liquid stevia
- 2 tbsp cacao powder
- 1 tbsp shredded coconut
- 1/2 cup frozen riced cauliflower
- 1/4 avocado
- 1/2 cup ice
- coconut, almonds, granola, or chocolate chips for topping
INSTRUCTIONS

Add all ingredients into a high speed blender and blend until smooth. Add more ice to achieve a thicker consistency.

Garnish with desired toppings and enjoy!
