Cinnamon Roll Collagen Chia Pudding

This Cinnamon Roll Collagen Chia Pudding is a protein-packed Paleo breakfast option! I love it with a dollop of melted coconut butter and crunchy pecans.

There are so many things to talk about with this recipe. First, we have the concept of breakfast. I’m rather obsessed with breakfast. It’s also quite possible that I’m obsessed with bacon and eggs, more so than breakfast. Eggs used to be my comfort food and my Sunday night dinner, and then they became my Saturday night dinner, and then my breakfast, and then my Friday night dinner. Now, I buy roughly five dozen eggs a week for myself. (Thank goodness they are one of the few things my gut actually likes.) It’s just not something I’m concerned about changing.

But this recipe doesn’t have eggs, so thats neither here nor there. This recipe is about cinnamon rolls and chia pudding. Cinnamon rolls are my thing. I haven’t really had them in pretty much ten years, but they’re my thing. My family has them every Christmas morning, and even though I don’t participate, it’s a tradition that I don’t let anyone forget. It just feel right. I need to live vicariously through someone, and thankfully they don’t object.

So now I have to find ways to cinnamon-roll-ify my Paleo life. I’ve decided that cinnamon rolls are constituted by cinnamon, a sticky pecan based filling, and some form of buttery icing. If you can get all of that together, we can call it a cinnamon roll, and I won’t be mad.

Ok, so now we need to talk about our weekends before we get to the recipe stuff. I finally picked a new car, so that stressful chapter of my life can come to a close. Car shopping alone as a girl is just annoying. I’m so tired of being talked down to by condescending sales people. The feminist inside of me probably prolonged the entire ordeal because I wasn’t going to buy a car and give commission to a guy who treated me like I was stupid. But it’s all ok now, because I’m the proud owner of a new (to me) SUV, and I’m definitely enjoying it.

I’m officially naming my new car The Spaceship because it has more buttons and controls than I know what to do with. I’m having flashbacks to being 12 years old in the Boston Science Center in the life-sized Millennium Falcon cockpit exhibit. Only now I have to pay a lot of money every month and fill it up with gas. Besides that, it’s the same thing.

Cinnamon Roll Collagen Chia Pudding

PREP TIME 5 minutes
Resting Time 5 hours

INGREDIENTS

For pudding:

INSTRUCTIONS

  1. In a small bowl, whisk together all of the pudding ingredients.
  2. Let the pudding rest in the fridge overnight, or at least 3-5 hours. The chia seeds will absorb all of the liquid and thicken into a pudding consistency.
  3. Divide the pudding between two jars. Top with pecans, raises, and melted coconut butter.
  4. Keep leftovers for 3 days in the fridge.
