Crispy Salmon with Horseradish Gremolata

I love a recipe that makes a weeknight feel special without taking a bunch of work (because who has time for that?) I have to make a conscious effort to eat a little variety during the week, or I’ll resort to a bland diet of plain chicken and sauteed zucchini (it gets the job done, but it’s far from enjoyable!) Roasted salmon is one of the best ways to make a slightly elevated dinner because it’s so easy to whip up in less than 30 minutes and serve with an easy sauce or dressing, or something fun and unexpected like this horseradish gremolata. It’s quick and healthy and it works all year round!

Easy Weeknight Salmon

Salmon is one of my favorite dinners because it’s a low-effort, high-reward situation. You just have to preheat an oven and be mindful not to overcook the fish and you can have a restaurant-quality meal in less than 30 minutes! Where many new cooks go wrong is overcooking the salmon until it’s super pale pink, when you really just want to roast it until it’s gently flakey.

Horseradish Gremolata

Gremolata is one of my all-time favorite things to serve with protein. It’s flavorful, easy, and also super fun to say. Traditional gremolata is an amalgamation of chopped parsley, lemon, and garlic. It’s less liquidy than a chimichurri or a pesto, so I find it works really well over a moist protein such as salmon. Also, who doesn’t like saying the word “gremolata?”

The extra fun ingredient in this sauce is the addition of Bubbies Horseradish, which adds a bright and sharp flavor to the gremolata. It works perfectly against the backdrop of the buttery, mild fish, and I find it to be just adventurous enough while still being a great dish to serve to picky eaters.

Bubbies is my go-to horseradish because of the ingredients and quality of flavor. Some horseradishes have strange preservatives and oils in them, but I prefer a product with a short ingredient label that I can easily understand. You can taste the quality, too! It’s a fun way to experiment with flavors without sacrificing quality or needing to buy a complicated list of ingredients.

Roasted Salmon with Horseradish Gremolata

INGREDIENTS

For gremolata:

  • 1 cup finely chopped flat leaf parsley
  • Zest of 1 lemon
  • 1 tbsp lemon juice
  • 1-2 tbsp Bubbies Horseradish start with less and add more if you like a bolder flavor!
  • 2 cloves garlic minced

For salmon:

  • 1 large salmon filet 1- 1.5 lbs
  • 2 tbsp olive oil
  • Salt and pepper
  • Flakey sea salt for serving

INSTRUCTIONS

  1. To make gremolata, whisk together lemon juice, zest, horseradish, and garlic. Stir in the parsley until well coated, and add extra horseradish to taste. Set aside.
  2. Preheat the oven to 375 F and line a rimmed baking sheet with parchment paper. Place the salmon on the sheet and drizzle with olive oil, salt, and pepper. Roast in the oven for 20-25 minutes, or until the salmon is opaque and flakey. Serve roasted salmon topped with gremolata and a sprinkle of flakey salt.
