I’m really pumped about this collard green wrap recipe because it’s the kind of thing that is making me love lunch again. Remember how excited you would get about lunch back in elementary school? That’s the kind of feeling I’m talking about.

Lunch is usually one of my least favorite things in life because it’s inconvenient and boring. I’ve been so busy these days that the last thing I want to do is stop working to go microwave leftover chicken and zucchini. Ew. And then there are the days where I don’t have any leftovers and have to pull out the cutting board and a skillet, which pretty much messes up my entire work momentum.

But alas, I’m from one of those families of fast metabolisms that don’t quit, and I’ll get aggressively hangry if I don’t take time to refuel in the middle of the day, so I have to participate in lunch regardless of my feelings on the matter. I’ve found that even though I work from home having lunch ready ahead of time is the way to go, just like I used to make when I went to an office. I always aim for a good serving of protein along with some avocado, veggies, and something fermented.

Collard Green Wraps

Collard Green Wraps are an easy lunchtime solution because they hold up well, are super easy to make, and are a great way to fill up on fresh veggies and meat. Plus, you can top them off with avocado and whatever condiment you’re currently loving so these wraps never get boring. The possibilities are endless! I also love giving new life to leftover meat or roasted veggies by putting them in one of these wraps instead of just heating them up.

Oh, and these wraps travel well too!  I made collard green wraps every time I have to take my lunch on the road because they hold together much better than a plain lettuce wrap will.

Spicy Sauerkraut

Sauerkraut is, in my opinion, the true hero of lunch. A premade condiment that adds zest and crunch to a meal without nasty ingredients? It’s a no-brainer. I made these Collard Green Wraps with my favorite Spicy Sauerkraut from Bubbies. It adds the perfect texture that makes these collard green wraps almost addictive.  I usually have to avoid cruciferous veggies because they’re tough on my gut, but the fermented veggies in Bubbies Spicy Sauerkraut are much easier to digest which makes this a win-win situation.

The collard green wraps recipe below is built around chicken and sauerkraut, but Bubbies kraut is also great with turkey, beef, or pretty much any other protein you want to pair it with, so feel free to get creative and use what you have on hand! I started putting the Spicy Sauerkraut on beef burgers this summer and it has added a whole new level to my burger life.

How to make Vegan Kale Pesto:

If I love anything as much as I love sauerkraut it’s pesto. I’m realizing as I write this post that I kind of just live for condiments but also…don’t we all?

I have a bunch of dairy-free pesto recipes all over my site because I don’t think enough people realize how easy it is to make a vegan or even a nut-free pesto if needed. And honestly, I don’t think you miss the changes. Enough garlic, herbs, and flavorful olive oil and you’re in business, and it tastes amazing on everything.

I make a batch of this kale pesto at least once a week so I can scoop it on my meals at lunch or dinner to add a flavor boost and some healthy fats without having to do a lot of work. All you need to make this is kale, cilantro, garlic, lemon, olive oil, salt, and either cashews or almonds. If you need to omit the nuts you can do so and add an extra tablespoon of olive oil. It will still taste amazing! Just combine everything in a blender until smooth and then keep it in a jar in the fridge until use, up to 4 days.

Grilled Chicken Collard Green Wraps with Spicy Sauerkraut

INGREDIENTS

Kale Pesto

  • 1 cup chopped Kale
  • 1 clove garlic roughly chopped
  • 1/2 cup cilantro leaves
  • Juice of 1/2 lemon
  • 1/4 cup cashews or almonds
  • 1/4 cup olive oil
  • 1/4 tsp sea salt

Wraps:

  • 6 Collard Green leaves stems removed
  • 1 medium cucumber cut into strips
  • 2 large carrots peeled into thin shreds
  • 4-5 grilled chicken breasts sliced unto strips
  • 1 avocado thinly sliced
  • 1 cup Bubbies Spicy Sauerkraut

INSTRUCTIONS

  1. - For pesto: add all ingredients into a food processor or high speed blender and blend until smooth.
  2. - Spread a large scoop of pesto on each collard green leaf.
  3. - Divide cucumber slices, carrots, chicken, sauerkraut, and a few avocado slices on each leaf, then roll the collard greens like a burrito around the ingredients.
  4. - Use a toothpick or a skewer to keep wraps intact until eating. Enjoy!
