Grilled Romaine with Peaches and Honey Mustard

This Grilled Romaine Salad might just be my new favorite healthy salad to whip up in the summer. Don’t get me wrong, I love a good regular spinach salad with veggies, but sometimes you just want to change it up a bit, and this is the way to do it! And who doesn’t love a new gluten free/vegan side dish that you can serve to everyone at a cookout? Plus, the grilled romaine in this recipe makes it sound extra fancy. So you can feed and impress your friends all with one salad!

What is Grilled Romaine?

This is gonna sounds reeeaaallly un-fancy for a minute, but this is literally throwing lettuce on a grill and slightly charring it. But here’s the thing: it works Like REALLY works. Romaine lettuce actually does really nicely on the grill–softening and crisping at the same time, a bit like when you grill zucchini. There’s a subtle bitterness that goes beautifully with the peaches and tangy honey mustard in this recipe. If you’re on a Whole 30 diet or just want to switch things up grilling romaine is a wonderful way to give your salad new life!

Can honey mustard be healthy?

Yes yes and yes! Probably not if you’re getting it at KFC though (do they even have honey mustard there?) It’s not the most low-calorie sauce on the planet, but my recipe has only mustard, honey, and olive oil–no fillers or nonsense included. You can whisk these together in a bowl or put them in a dressing bottle and shake it all up, then keep the leftover in the fridge for salads throughout the week. Vegan and gluten free salad dressings are actually really easy to make at home and keep in the fridge–I hardly ever feel the need to buy a premade dressing anymore.

What you’ll need to make this grilled romaine salad:

Romaine hearts, halved lengthwise: You can use more romaine for a bigger salad! I wouldn’t try a different lettuce, though.
Olive oil: You’ll want to lightly brush the romaine before you
Sea Salt
Peaches, pitted and sliced: I used white peaches, but any peach will do!
Fresh cilantro: I love cilantro on my salads, but feel free to leave it off if you’re not a fan
Slivered almonds: the nutty almond flavor pairs perfectly with the sweet peaches and smokey grilled romaine!
Celery: add a bit of crunch to this salad with some diced celery!

INGREDIENTS

  • 2 romaine hearts halved lengthwise
  • 1 tbsp olive oil
  • sea salt
  • 2 peaches pitted and sliced
  • 1/4 cup fresh cilantro
  • 1/2 cup slivered almonds
  • 1 celery stalk diced
  • HONEY MUSTARD
  • 1/4 cup dijon mustard
  • 1/4 cup honey
  • 1/4 cup olive oil

INSTRUCTIONS

  1. For the grilled romaine: Preheat a grill or grill pan to medium heat.
  2. Lightly brush the cut sides of the romaine with the olive oil and sprinkle with sea salt. Place the romaine on the preheated grill cut-side down and cook for about 3 minutes. Remove from grill and place the romaine hearts on platter or salad bowl. Top with sliced peached, cilantro, celery, and slivered almonds, then drizzle with dressing.
  3. To make the honey mustard, combine all ingredients in small jar or bowl and whisk until smooth .
