This Paleo Bacon Butternut Pizza Casserole tastes just like a crispy, bacon loaded piece of pizza, without any of the grains or dairy! This cauliflower rice crust topped with fresh tomato sauce, bacon, and butternut squash makes for an easy Paleo pizza solution.
Soooo it’s been an eventful week. My car got destroyed by a Staples truck bright and early on Monday morning, and that whole ordeal has since consumed my life. I think I’ve made about 68 phone calls in the past 48 hours, which sucks because I hate phone calls. Also, my car is in pieces in the lot outside my window, so that isn’t spectacular either. My car and I have that special first-car bond, so this whole thing cuts deep, ya know? I bought my bright red VW when I was 16 — I’ll never forget how excited I was to have a bright red car. I immediately did a lot of stupid things to it, like paint stripes on the sides and black out my rims. I had a bunch of guy friends, and my car is the result of that I guess.My car has also been my second home whenever I was too tired to drive or went on a solo road trip. I used to nap in it at school because the entire campus was depressing to me. It was also my little “safe zone” when I drove across the country alone to move to Arizona. I cried for nearly the entire drive, but my car had a sense of comforting familiarity that helped ease the pain as I got further away from home. Getting a new car and losing my CT license plate just feels like cutting another tie to the people and place that made me who I am. Theres a leaf in my trunk that flew in when I was packing to move out here, and I’ve never taken it out. I don’t want to lose that.
I’ve been getting so nostalgic over my car that I forgot its Halloween. I’ve been living a much worse nightmare over here, so I really feel no need to dwell on Halloween festivities and put up spooky decorations. I feel like I should apologize to you guys for barely acknowledging this holiday of sorts, but I really don’t give a rat’s pajamas about it.
Yeah, I said rat’s pajamas.
Anyways, lets keep talking about me instead. So now I might need to get a new car, but I really don’t want a new car. New cars just sound like money that I don’t have, ya know? So maybe I’ll just ride a bike and uber everywhere for a little while. Have any of you tried it? Let me know in the comments — I’m really curious if it’s a good way to save money!

This might be my favorite recipe on my site. It’s so easily and mouthwateringly delicious. It kind of looks like a deep dish pizza, and it absolutely tastes like one! Except it’s the type of pizza that doesn’t leave you feeling bloated and sluggish. This pizza casserole gives me life.
Bacon Butternut Pizza Casserole
INGREDIENTS
- 3 cups cauliflower rice
- 1.5 cups marina sauce divided
- 1 lb ground meat turkey, sausage, or beef all work well
- 1 clove garlic minced
- 1/2 tsp salt
- 1/2 tsp basil
- 1 tsp oregano
- 1 bell pepper sliced
- 1/2 small sweet onion sliced
- 1 cup spinach
- 1 cup cubed butternut squash
- 1/4 lb bacon
- 2 eggs
- 2 tbsp coconut oil divided
INSTRUCTIONS

Grease a baking dish (I used 8x10) and preheat oven to 400 F. Mix 1 1/4 cups of the marinara sauce with the cauliflower rice and spread over the bottom of the baking dish.

Place a large skillet over medium heat. Add bacon to skillet and cook for 4-5 minutes on each side, until crispy. Remove and set aside.

Add squash to skillet and cook, stirring occasionally, for 9-10 minutes, until softened. Add bell pepper and onion and cook for 5-6 more minutes. Remove from skillet and set aside in a large bowl.

Add minced garlic, salt, and meat of choice to the skillet and cook for 7-8 minutes, until no longer pink. Add oregano, basil, and spinach. Stir to combine, and then add the meat to the bowl with the veggies. Add two eggs and mix thoroughly. Pour the meat and veggie mixture into the baking dish over the cauliflower rice.

Crumble bacon into chunky pieces and sprinkle over the top of the casserole. Add the remaining sauce in a few dollops on the top of the casserole. Bake for 50 mins to an hours, until the egg mixture is set.

Let cool for at least 10 mins before serving to allow the rice to set.
