This Paleo Sticky Rice Casserole is legit comfort food. I think it’s the creaminess of the coconut milk that makes it feel like the type of food your mom makes in the winter when you’re little. It’s crazy good for you, too — no cream of chicken soup or preservatives in sight. The flavors are pleasant but also very mild — nothing too spicy or crazy that some parties might object to. I really think we’ve got a winner here.
Maybe I’m biased because the casserole sauce has coconut aminos in it. I’ll eat anything with that delicious stuff. It’s like soy sauce for soul. I’ll never forget when I introduced aminos to a client wayyyy back when I was personal training. She totally loved them, and texted me that she was “abusing amigos” because she loved them so much. She didn’t understand why I died laughing. Autocorrect’s best Freudian slip to date.
OK so we have to catch up on weekend TV. I finished Suits, so I can move on with my life now. But heres the thing — I feel like the ending was really anti-climactic. Like I was expecting more closure, but I feel like everything was kind of left up in the air. Like everyone was moving on to do something else, but only kind of. All we know is Rachel and Mike got married and they’re moving to Seattle, and everyone else made some plans. But I need to know if they actually follow through on this stuff, because heres these thing about that show — no one makes big decisions quickly. They always drag stuff out for seasons. SO I’m just supposed to believe that everyone changed their course of action in their lives and is following through on it in a matter of 2 episodes? No way. Is this the Queen’s fault? Did she summon Meghan Markle away and force the show to end abruptly? The nerve.
I also finished the second season of Ozark, which was legit. I knew that psycho Snell woman was going to kill her husband. She totally had that vibe. Overall, I think this season was way better than the first one. Much more dramatic and suspenseful. Then again, I think anything Jason Bateman is in is pretty great — beginning all the way back with Little House on the Prairie. PLEEEAAASSSEEE tell me you’ve seen every episode of that show. I was raised on Little House. I would not be where I am today if we hadn’t owned every season on DVD. I’ll never forget binge watching it before binge watching was even a thing. Every snow day or sick day was spent with Little House… And then a lot of the other days in between. I think the episode I’ve watched the double feature where Laura moves to Sleepy Eye to refurbish that building for the blind school. I think it’s in the season with the red cover. Thats all I know.

Paleo Sticky "Rice" Casserole
INGREDIENTS
- 1 16 oz bag of cauliflower rice
- 1 tbsp apple cider vinegar
- 1/2 tsp salt
- 1/2 head of small purple cabbage, shredded (about 2 cups)
- 1 red bell pepper, diced
- 2 cups sugar snap peas, or snow peas
- 1 lb chicken, shredded (shred your own or use a rotisserie chicken)
- 1/2 inch fresh ginger, grated (1-2 tsp)
- coconut oil for frying
For Sauce
- 1 cup canned coconut milk
- 1/4 cup coconut aminos
- 2 eggs
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 clove of fresh garlic minced
- 1 tbsp fresh lime juice
INSTRUCTIONS

Preheat oven to 350 degrees F.

Heat a coconut oil greased skillet over medium heat. Add in cauliflower rice and apple cider vinegar, and sauté for 5 minutes to make the rice slightly "sticky." Place 3/4 of the rice in the bottom of a greased basking dish (I used a 10x7), and set aside the remaining 1/4 to top the casserole.

Clean the skillet and return to heat. Add 1 tsp coconut oil and ginger, and saute for 1-2 minutes. Add the cabbage, bell pepper, and peas to the skillet. Cook for 7-8 minutes, or until softened but still slightly crispy.

Remove from heat and mix with shredded chicken. Place the veggie and chicken into the baking dish over the cauliflower rice.

Whisk together the coconut milk, aminos, eggs, salt, pepper, garlic, and lime. Pour the sauce over the casserole, covering evenly.

Place the remaining cauliflower rice over the top and pat to form a "top crust."

Bake for 35-40 minutes, until egg mixture is set. Let cool for 15 minutes before serving to let the rice firm.

Freeze leftovers, or keep refrigerated for up to a week.
