It’s entirely possible for me to live on fall food forever. I’m really into the roasted fall veggies and warm curries, but I’m not against a healthy apple dessert when the sweet cravings hit. And hey, leftover apple pie for the occasional breakfast? I can totally get behind that. I had an apple dessert craving and decided to try my hand at these Small Batch Paleo Caramel Apple Blondies and it was a good call–I’m loving small batch recipes for the days where I want dessert but don’t have a crowd to share with.

I’m not a big fruit gal, but I do love some apples in my baking. They add a natural sweetness that I love since it allows me to cut back on the sugar in the recipe without sacrificing any flavor. Normally I would never taint my blondies with fruit, but apple is absolutely the exception to that rule. It’s just so good with the buttery crumb of the blondie, and the salted caramel swirl takes these from regular blondies to a bonafide paleo fall dessert that you just have to make at least once (or 4 times) every apple season.

How to make the best Caramel Apple Blondies

If you’ve been around this blog for a minute you know I despise most baking, so I try to keep things as simple as possible when I’m making dessert recipes for you guys. This caramel blondie recipe is no exception! It’s a one-bowl recipe that takes under an hour to put together, and you don’t need any Michelin-star skills to make it work. You just mix together your wet ingredients, stir in the dry, and then swirl in your date caramel sauce that you can make in a food processor (more on that below.) This recipe is pretty much foolproof, but here are a few tips to help you along:

  • Use parchment paper to line your baking pan.
  • Finely chop your apple–I don’t like to leave these chunks too big or they sink in the bars
  • Add an apple slice on top if you’d like a little bit of a garnish.
  • Don’t be too heavy-handed when you swirl in the caramel since this is only a half batch. You don’t want to make soggy blondies.
  • Make sure your ingredients are room temp, as always.

Nut-Free Paleo Apple Blondies:

It can be really hard to find paleo recipes that are nut-free, but these babies are! just omit the pecans that I stirred into the batter (they’re just a fun garnish, really) and you have yourself a paleo and nut-free recipe perfect for fall.

The Best Vegan/Paleo Date Caramel Sauce

The idea of making a vegan/paleo caramel sauce might sound a little intimidating but it’s actually the easiest thing ever. There are some vegan caramel recipes where you boil down coconut milk, but I find this one to be much easier. All you need is your dates, non-dairy milk, honey (agave or maple for vegan), and a food processor and you’re in business! You just blend everything until smooth and enjoy it however you please. Oh, and add a pinch of salt for a salted caramel vegan date sauce. Yaaassss.

You’ll have some leftover caramel sauce in this recipe which you can store covered in the fridge for up for a week.

How many Caramel Apple Blondies does this make?

This post is being written during COVID-19 where we’re all trying to ration our ingredients, so this recipe only makes a half pan of blondies–about 6-8. I bake mine in an 8×4 bread pan where normally I’d use an 8×8 square. And I mean don’t we all have those days where we want just enough blondie action to satisfy our cravings without going on a full-on blondie bender?

If you need a bigger batch and want to double the recipe I’m positive it would still come out delish, but I haven’t personally tried this yet.

INGREDIENTS

  • 1/3 cup coconut oil
  • 1/4 cup coconut sugar or sugar of choice
  • 2 tbsp honey
  • 1 egg
  • 3 tbsp coconut milk
  • 1 tsp vanilla
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup + 2 tbsp Cassava Flour
  • 1/4 cup coconut flour
  • 1/2 cup chopped apple
  • Sea Salt for topping
  • 1 batch caramel date sauce
  • chopped pecans for garnish (optional)

3 Ingredient Paleo Date Caramel Sauce

  • 1 cup medjool dates pitted
  • 1/3 cup coconut milk
  • 2 tbsp honey or agave for vegan - optional, but adds sweetness
  • 1/4 tsp salt.

INSTRUCTIONS

  1. To Make date sauce:Combine all the ingredients in a food processor. Blend on high until smooth, adding extra coconut milk if needed for a smoother consistency. Store in a covered container in the fridge until use.
  2. Preheat oven to 350 degrees Fahrenheit. Line an 8x4 bread pan with parchment and grease with coconut oil
  3. In a large bowl beat egg, honey, and sugar until well creamed. Add coconut oil and continue to beat well for a minute to combine. Stir in coconut milk, then vanilla, baking soda,  and salt.
  4. Add cassava flour and coconut flour and stir well to combine. Batter will be thick but should be spreadable. If it's too thick add 2 tbsp coconut milk.
  5. Fold in the apple, then spoon the batter into evenly the prepared dish. Take a few big spoonfuls of caramel sauce and place on top of the batter, using a thin knife to make a few swirls in the batter. Top with apple slices if desired.
  6. Bake for 25-30 minutes, or until lightly browned and a knife comes out clean. Allow to cool for at least 15-20 minutes before removing from the pan. Drizzle with extra caramel, sea salt, and chopped pecans and enjoy!
