Tahini Crumb Cake {grain-free, naturally sweetened, paleo}

I’ve made a lot of tahini recipes in my day but this is the first time I’m adding it into my favorite kind of dessert: crumb cake! I love this moist, sweet cake contrasted with the nuttiness of the tahini–it’s a match made in heaven! Plus this dessert pairs well even with the elimination diet I’ve been on since I’m still avoiding nuts as much as possible. I think I might need to brave the Arizona heat and turn the oven on again so I can make another one of these to stash in the freezer! It’s always good to have a tahini-based dessert on stand by.

Cassava Flour Crumb Cake

I’ve been cooking most of my recipes with Cassava Flour lately and I’m loving it! It’s a fine, starchy flour made from Yucca that gives a moist, springy texture without any gluten being present. It’s a gut-friendly, low-inflammatory flour that is also AIP compliant for those on elimination diets. Nearly all of the cakes/breads/cookies/bars on my site have cassava flour and I don’t see that changing any time soon–it has too much going for it!

What you’ll need to make Paleo and dairy-free Cake

You’ll only need a handful of paleo ingredients to make this crumb cake, and most of them are pantry staples, and lower-cost gluten-free flours. Plus it’s all naturally sweetened! Here’s what you need:

  • Coconut Flour: I love coconut flour for adding fluff and chew to grain-free baked goods
  • Cassava flour: This helps give a fluffy, gluten like texture without the gluten, and it’s also a prebiotic!
  • Tapioca Starch: This helps to add just a little extra fluff to the cake texture.
  • Baking soda: for that fluff factor.
  • Coconut Milk: A dairy-free way to add moisture to the batter. You can sub almond milk or another dairy-free milk.
  • Apple Cider Vinegar: I add this to my coconut milk to make a dairy-free buttermilk
  • Coconut sugar: a lower inflammatory sugar option that I use in most of my baking.
  • Coconut oil: You could sub avocado oil depending on what you have on hand.
  • Eggs: You can try a flax egg to make this vegan, but I haven’t personally tested that.
  • Tahini: This liquid gold oil is made from sesame seeds, sort of like a grown-up peanut butter. I love baking with it!

Tips for making the best grain-free crumb cake:

The great thing about this recipe is how easy it is, even though it seems so decadent! You just mix your wet ingredients, add in the flours, and pile everything in a pan with a layer of tahini streusel! I like to do all of my baking in parchment-lined baking pans to make sure nothing sticks. Here are a few other tips to help you crumb cake come out perfectly:

  • Don’t pack your flours too much when you’re measuring or the batter may be dry. If this happens you can offset it with a bit of coconut milk.
  • Don’t overbeat your batter when mixing it together.
  • Make sure your ingredients are room temperature!

Paleo Tahini Crumb Cake

INGREDIENTS

  • 2 large eggs
  • 1/2 cups coconut sugar
  • 1/3 cup tahini
  • 1/4 cups coconut oil
  • 1/2 cup full fat coconut milk
  • 1 tsp apple cider vinegar
  • -1 tsp vanilla
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup cassava flour
  • 2 tbsp tapioca starch
  • 1/3 cup coconut flour

For crumble topping

  • 1/2 cup coconut flour
  • 2 tbsp tahini
  • 1/4 cup coconut sugar
  • 3 tbsp coconut oil

For glaze:

  • 1/4 cup warmed coconut butter

INSTRUCTIONS

  1. Preheat oven to 350 degrees Fahrenheit. Line a 9 inch cake pan with parchment paper and grease with coconut oil.
  2. To make the crumble mix together all crumble ingredients (tahini, coconut flour, sugar, and oil) with a fork and set aside.
  3. In a large bowl beat eggs, and sugar until well creamed. Add coconut oil and tahini and continue to beat well for a minute to combine. Stir in coconut milk with vinegar, then vanilla, baking soda,  and salt.
  4. Add cassava flour, tapioca starch, and coconut flour and stir well to combine. Batter will be thick but should be spreadable. If it's too thick add 2 tbsp coconut milk.
  5. Spoon the batter into evenly the prepared dish.
  6. Pour the crumble evenly over the batter. Bake for 30-35 minutes, or until lightly browned and a knife comes out clean. Allow to cool for at least 15-20 minutes before removing from the pan. Drizzle with warm coconut butter and enjoy!
