Turmeric Orange Cauliflower Rice Salad

A zesty and flavorful cauliflower rice salad makes a perfect Paleo lunch or side dish! You can enjoy this hot or cold, and it goes great with any protein.

Guys. So I’ve been doing Corepower yoga, and I’m in love. I’m really sad it’s so pricey, because  if it were half the price I would love to go on the regular. I know it’s hard to make money as a fitness instructor so I understand why it’s priced the way it is, but I’m still bummed. I need to become a yoga instructor so I can take free classes. You know, because I have time for that.

Anyways, I went to Corepower, and it was the best yoga class I’ve ever been to. Not that I’m an expert yogi (hashtag spiritual gangster) or anything, but I’ve been to a lot of yoga studios over the years, so I feel like a qualified judge. It was truly great. I did the Corepower 2 class, which is a heated advanced Vinyasa class. I always look for the more advanced classes because I’m a glutton for punishment, but I’m going to try CP1 at some point so I can give you a review. I’m just so excited to be back in the yoga game, guys.

I started doing yoga when I was about 14, and I’ve been a true fangirl ever since. I’ll go periods of time without practicing, but then when I jump back in I can’t get enough. I still love lifting weights even if I’m doing yoga that day, but I’m going to force myself take a step back and limit myself to one workout a day while I continue to work on healing my gut.

I’m also trying to transition to a more regular yoga practice( in leu of intense training) in the hope that it will bring back my period.  When you have hypothalamic amenorrhea, it’s because there’s been an energy imbalance in your body. The body is trying to protect you from childbearing because it senses that you’re already under too much stress. The only way to reverse this is to remove the perceived threat to the body and make it feel safe again. It takes rest, calories, and lowering your stress. I really don’t know how to live a life where I don’t move, so hopefully yoga isn’t too intense for my body to work with.

In the meantime, here’s a delish cauliflower rice salad I threw together for an easy lunch last week. I ended up loving it, so I made it again! I ate it with a Moroccan Chicken Thigh from my upcoming book and the combination was just. so. perfect. Turmeric Orange Cauliflower Rice Salad

PREP TIME 5 minutes
COOK TIME 15 minutes
TOTAL TIME 20 minutes
SERVINGS 4 people

INGREDIENTS

  • 1 tbsp coconut oil
  • 2 cloves garlic minced
  • 3 celery stalks chopped
  • 1/2 white onion diced
  • 4 cups cauliflower rice
  • 2 cups shredded carrots
  • 1 tbsp lemon juice
  • 2 tbsp orange juice
  • 1 tsp turmeric
  • 1/4 tsp salt
  • 2 tbsp fresh cilantro chopped
  • 1/4 cup dried cranberries
  • 1/4 cup pumpkin seeds

INSTRUCTIONS

  1. Place a skillet over medium heat. Add in oil and garlic and sauté for 2 minutes.
  2. Add onion and celery to the skillet and sauté for 4-5 more minutes, until onion is translucent.
  3. Stir in cauliflower rice, carrots, lemon, orange, turmeric, and salt. Sauté for 7-8 more minutes, until rice is softened.
  4. Stir in cilantro, cranberries and pumpkin seeds and enjoy!
