Chocolate Blackberry Paleo Skillet Oatmeal

PREP TIME 5 minutes
COOK TIME 25 minutes
TOTAL TIME 30 minutes

INGREDIENTS

  • 1/2 cup shredded carrots
  • 2 tbsp cocoa powder
  • 2 tbsp honey
  • 1/4 cup sliced almonds
  • 2 tbsp coconut flakes
  • 1 egg
  • 1/4 cup almond milk
  • 10 Blackberries

INSTRUCTIONS

  1. Preheat oven to 375 F.
  2. Chop half of the blackberries into small pieces.
  3. In a medium sized bowl owl, stir together carrots, cocoa powder, honey, almonds, coconut, egg, milk, and the chopped blackberries.

  4. Top with additional blackberries and bake at 375 for 25 minutes, or until firm.
  5. Top with almond butter and enjoy!

RECIPE NOTES

For nut free, omit almonds and add 1/4 cup shredded coconut flakes. For egg free, replace egg with 1 tbsp pumpkin.
