Place a skillet over medium heat. Add in oil and garlic and sauté for 2 minutes.

Add onion and celery to the skillet and sauté for 4-5 more minutes, until onion is translucent.

Stir in cauliflower rice, carrots, lemon, orange, turmeric, and salt. Sauté for 7-8 more minutes, until rice is softened.

Stir in cilantro, cranberries and pumpkin seeds and enjoy!
