Harissa Lime Salmon Burgers

INGREDIENTS

  • 2 tbsp coconut oil
  • 2 6 oz cans of salmon
  • 2 eggs
  • 3 cup almond meal
  • 3 tbsp harissa paste
  • ½ tsp garlic
  • ½ tsp onion powder
  • Juice of ½ lime

For lime ranch:

  • 1/2 cup coconut cream
  • 1 tbsp lime juice
  • ¼ tsp salt
  • ½ tsp dill

INSTRUCTIONS

  1. In a large bowl, mix together salmon, egg, almond meal, harissa, garlic, onion, and lime. Form the mixture into 4 burger patties.
  2. In a small dish, stir together coconut cream, lime, salt, and dill for ranch. Set aside.
  3. Heat coconut oil in a large skillet over medium-high heat. Cook for 2-3 minutes on each side, or until golden and crispy.
  4. Top with ranch and enjoy!
