Herby Spring Pea Zoodles

INGREDIENTS

  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 3 large zucchini spiralized
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup fresh spring peas
  • Juice from 1/2 lemon
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh basil chopped

INSTRUCTIONS

  1. Place olive oil and garlic in a skillet over medium heat. Saute for 2 minutes, or until fragrant. Add zucchini, salt, and pepper and saute for 3-4 minutes, or until zucchini is softened. Toss with peas, parsley, and basil and serve with a squeeze of lemon!
