Paleo Lemon Garlic Hummus

INGREDIENTS

  • 3 cups cauliflower florets
  • 3 tbsp tahini
  • 1 tbsp olive oil
  • 1 clove fresh garlic minced
  • 1 tbsp fresh lemon juice
  • salt and pepper

INSTRUCTIONS

  1. Steam or cook the cauliflower florets until softened -- I steam mine for about 10 minutes or use a microwave steamer bag.
  2. Add cauliflower, garlic, tahini, lemon, and olive oil into a food processor or high speed blender and blend until smooth. Add salt and pepper to taste.
  3. Garnish with tahini drizzle and extra smoked paprilka. Hummus will keep in the fridge for a week.
