A creamy dairy-free collagen smoothie topped with whipped Dalgona coffee and a chocolate drizzle makes the perfect healthy breakfast smoothie! Dairy-free, gluten-free, and fruitless!

INGREDIENTS

Smoothie Layer:

  • 2 cups coconut or almond milk
  • 1 tsp cinnamon
  • 2 tbsp honey
  • 3 tbsp almond butter
  • 1 cup frozen riced cauliflower
  • 1/2-1 cup ice cubes
  • 2 servings unflavored collagen 4 scoops

Dalgona coffee:

  • 4 tablespoons instant coffee
  • 4 tablespoons granulated sugar
  • 4 tablespoons hot water

Garnish:

  • 3-4 tbsp melted dairy-free chocolate chips optional

INSTRUCTIONS

  1. To make smoothie layer, add all smoothie ingredients into a high speed blender and blend until smooth. Add ice to achieve a thicker consistency.
  2. In a mixing bowl, combine instant coffee, sugar and hot water. Use a frother or a beater to mix on high for several minutes. The liquid will slowly thicken and turn to a light golden brown. Stop beating when the texture resembles stiff peaks.
  3. Pour your blended smoothie into two glasses, stir in melted chocolate if desired, and then top with the whipped coffee mixture. Enjoy!
