INGREDIENTS

for Larb

  • 1 tbsp coconut oil
  • 1 lb ground turkey
  • 4 scallions thinly sliced
  • 2 tbsp lime juice
  • 2 tbsp coconut aminos
  • 2 cloves garlic minced
  • 1/4 cup white onion thinly sliced
  • 1/4 cup fresh mint
  • 1/4 cup cilantro

For rice

  • 5 cups cauliflower rice
  • 1 tbsp coconut oil
  • 1/4 cup chopped cilantro

For serving

  • 1 thinly sliced cucumber
  • lime wedges
  • extra cilantro

INSTRUCTIONS

  1. Place a skillet over medium high heat.
  2. Add in cauliflower rice and coconut oil. Saute until cauliflower rice is softened and then stir in cilantro . Cook for another minute, then divide into bowls and set aside.
  3. Return the skillet to medium high heat with coconut oil , onions, and garlic. Saute for 3 minutes, then add in turkey and saute until browned, breaking up into small pieces with a spoon, about 5-6 minutes. Drain excess liquid if necessary.
  4. Reduce heat a bit and stir in lime juice, coconut aminos, scallions, cilantro, mint, and salt. Cook for 3-4 minutes, stirring well, until liquid is cooked off.
  5. Spoon larb over cilantro cauliflower rice, top with cucumber slices and fresh herbs, and enjoy!
