Easy Thai Salmon Burgers over Zoodles

INGREDIENTS

  • 1 egg, per person
  • 3 zucchini, spiralized
  • 3 carrots, peeled and spiralized or shaved
  • coconut aminos
  • lime juice, for garnish

INSTRUCTIONS

  1. Mix together salmon, eggs, and spices. Form mixture into 4 burger patties.

  2. Heat skillet greased with coconut oil over medium-high head. Cook burgers for 5-6 minutes on each side, or until browned and cooked through. Set aside. 

  3. In a new pan, saute the carrots and zucchini noodles over medium heat for 3-5 minutes. Drizzle with coconut aminos and divide into bowls. Place a burger in each bowl over noodles.

  4. Fry eggs and place one in each bowl. Garnish with a squeeze of lime and enjoy!
