These Grilled Chicken Collard Green Wraps with Spicy Bubbies Sauerkraut are one of my favorite Paleo/keto lunches that come together quickly. An easy vegan kale pesto and spicy sauerkraut make these wraps anything but boring!

Grilled Chicken Collard Green Wraps with Spicy Sauerkraut

INGREDIENTS

Kale Pesto

  • 1 cup chopped Kale
  • 1 clove garlic roughly chopped
  • 1/2 cup cilantro leaves
  • Juice of 1/2 lemon
  • 1/4 cup cashews or almonds
  • 1/4 cup olive oil
  • 1/4 tsp sea salt

Wraps:

  • 6 Collard Green leaves stems removed
  • 1 medium cucumber cut into strips
  • 2 large carrots peeled into thin shreds
  • 4-5 grilled chicken breasts sliced unto strips
  • 1 avocado thinly sliced
  • 1 cup Bubbies Spicy Sauerkraut

INSTRUCTIONS

  1. - For pesto: add all ingredients into a food processor or high speed blender and blend until smooth.
  2. - Spread a large scoop of pesto on each collard green leaf.
  3. - Divide cucumber slices, carrots, chicken, sauerkraut, and a few avocado slices on each leaf, then roll the collard greens like a burrito around the ingredients.
  4. - Use a toothpick or a skewer to keep wraps intact until eating. Enjoy!
