INGREDIENTS
Kale Pesto
1cupchopped Kale
1clovegarlic roughly chopped
1/2cupcilantro leaves
Juice of 1/2 lemon
1/4cupcashews or almonds
1/4cupolive oil
1/4tspsea salt
Wraps:
6Collard Green leavesstems removed
1medium cucumber cut into strips
2large carrotspeeled into thin shreds
4-5grilled chicken breastssliced unto strips
1avocadothinly sliced
1cupBubbies Spicy Sauerkraut
INSTRUCTIONS
- For pesto: add all ingredients into a food processor or high speed blender and blend until smooth.
- Spread a large scoop of pesto on each collard green leaf.
- Divide cucumber slices, carrots, chicken, sauerkraut, and a few avocado slices on each leaf, then roll the collard greens like a burrito around the ingredients.
- Use a toothpick or a skewer to keep wraps intact until eating. Enjoy!
