Apple filling
5applespeeled and sliced
2tablespoonscoconut sugar
2teaspoonground cinnamon
1teaspoonground nutmeg
1teaspoonpure vanilla extract
Topping
1cupunsweetened coconut flakes
1/2cupcassava flour
2tbspcoconut flour
1teaspoonground cinnamon
1/4tspsalt
1/2cupcoconut oil
1/4cuphoney
INSTRUCTIONS
Preheat oven to 350°F. Grease an 8 or 9 inch baking dish.
Stir together all apple filling ingredients in a large bowl then pour into the prepared dish in an even layer.
Add all of the crisp topping ingredients to a bowl. Using a fork, stir until crumbly, then pour in an even layer over the apples.
Bake for 25 minutes, then cover with foil and bake for an additional 20 minutes, or until the apples are soft.
Allow to cool for 10-15 mins. Serve warm with coconut ice cream!
