Roasted Salmon with Horseradish Gremolata

INGREDIENTS

For gremolata:

  • 1 cup finely chopped flat leaf parsley
  • Zest of 1 lemon
  • 1 tbsp lemon juice
  • 1-2 tbsp Bubbies Horseradish start with less and add more if you like a bolder flavor!
  • 2 cloves garlic minced

For salmon:

  • 1 large salmon filet 1- 1.5 lbs
  • 2 tbsp olive oil
  • Salt and pepper
  • Flakey sea salt for serving

INSTRUCTIONS

  1. To make gremolata, whisk together lemon juice, zest, horseradish, and garlic. Stir in the parsley until well coated, and add extra horseradish to taste. Set aside.
  2. Preheat the oven to 375 F and line a rimmed baking sheet with parchment paper. Place the salmon on the sheet and drizzle with olive oil, salt, and pepper. Roast in the oven for 20-25 minutes, or until the salmon is opaque and flakey. Serve roasted salmon topped with gremolata and a sprinkle of flakey salt.
