For gremolata:
1cupfinely chopped flat leaf parsley
Zest of 1 lemon
1tbsplemon juice
1-2tbspBubbies Horseradishstart with less and add more if you like a bolder flavor!
2clovesgarlicminced
For salmon:
1large salmon filet1- 1.5 lbs
2tbspolive oil
Salt and pepper
Flakey sea saltfor serving
INSTRUCTIONS
To make gremolata, whisk together lemon juice, zest, horseradish, and garlic. Stir in the parsley until well coated, and add extra horseradish to taste. Set aside.
Preheat the oven to 375 F and line a rimmed baking sheet with parchment paper. Place the salmon on the sheet and drizzle with olive oil, salt, and pepper. Roast in the oven for 20-25 minutes, or until the salmon is opaque and flakey. Serve roasted salmon topped with gremolata and a sprinkle of flakey salt.
