Pumpkin Turkey Meatballs with Zoodles

INGREDIENTS

Meatballs

  • 1 lb ground turkey
  • 1/2 inch fresh ginger grated
  • 1 tsp rosemary
  • 1 tsp garlic
  • 1/2 tsp salt
  • 1 egg

Sauce

INSTRUCTIONS

  1. Preheat over to 400 F and line a baking sheet with parchment paper.
  2. in a large bowl, combine meatball ingredients. Roll into about 12 meatballs and bake at 400 for 12-15 minutes.

  3. Grease a medium skillet with coconut oil and place over medium-high heat. Add onion to skillet and sauté for 2-3 minutes to caramelize.
  4. Add coconut milk, pumpkin, salt, and turmeric to skillet. Simmer for 5-10 minutes while sauce thickens. Add meatballs to skillet and cover to let the meatballs warm up.
  5. Right before serving, add zoodles to the skillet. Stir to cover in sauce and let simmer for 5 minutes while the squash softens.
  6. Serve and enjoy!
