Coconut Curry Poached Cod (for two)

INGREDIENTS

  • 8 oz cod pieces or filets
  • 1 14 oz can coconut milk use full fat for extra creamy curry
  • 1/2 cup vegetable or chicken broth
  • 1 tbsp Thai Red Curry Paste use 2 if you like it extra spicy
  • 1 tsp ginger
  • 1 Tbsp coconut aminos
  • 1 clove garlic minced
  • coconut oil
  • 1/2 green bell pepper sliced thin
  • 2 large carrots shredded
  • 1/4 cup sliced mushrooms I used cremini
  • 1 large zucchini spiralized

INSTRUCTIONS

  1. Grease a medium sized skillet with coconut oil and place over medium heat.
  2. Add garlic, bell pepper, and carrots to the skillet. Saute for 5-6 minutes, until softened.
  3. Add curry paste, coconut milk, broth coconut aminos, and ginger to the skillet. Stir well to combine. Bring to a boil and then reduce to low heat to simmer. Add mushrooms, zucchini noodles, and cod to the skillet. Cover to let the cod simmer for 8-9 minute, or until flaky.
  4. Serve and enjoy!
