Good morning lovelies! I can’t believe it’s already November and we’re rounding the base to Thanksgiving and Christmas! With this time of year comes the need for more family-friendly brunch recipes that fill up a crowd, so I’m here with an Apple Butter French Toast that will keep everyone happy and full. Because the only thing better than French Toast is a fall-themed version that you don’t have to slave over a stove to make. Oh! And it’s super easy to make gluten or grain-free. A true holiday miracle! I often think about what I miss most about the gluten world. I’d have to go with either waffles or thick, buttery toast at a diner for brunch. (Omg. My mouth is watering hard.) Clearly, breakfast is on my mind (per usual.) Thankfully this Apple Butter French Toast bake fills the comfort-food void with crusty baked bread, sweet apple butter, and maple syrup.
What is a French Toast Bake?
French Toast Bake is exactly what it sounds like: baked French Toast. You need all of the same ingredients as standard french toast, just prepared in bulk and baked. It’s also very similar to bread pudding in the way that you prepare it: You combine everything for your egg mixture, soak your bread, and combine it all in a baking dish and cook until crisp on the edges. I let my bread soak overnight and then cook it the next morning and serve it up with real maple syrup. To keep it paleo I used paleo sandwich bread, but you can also use gluten-free bread or regular bread if it floats your boat!

Tips for making this Paleo Apple Butter French Toast Bake:
- Use a good, thick bread–not something crumbly. I used a homemade cassava flour bread, but any good gluten-free sandwich bread should be perfect!
- Give your French Toast adequate time to soak before baking. You’ll want to let it sit for around 8 hours minimum.
- Watch the top carefully and cover with tinfoil if it starts to burn.
- Have lots of fresh, real maple syrup on hand for serving!
Paleo Apple Butter French Toast Bake
Thick slices of grain-free bread coated in apple butter and creamy eggs come together for a delicious Paleo Apple Butter French Toast Bake. The perfect make-ahead gluten-free breakfast for a crowd!
- 1 loaf grain-free bread or other
- 8 Blue Sky Family Farms Pasture Raised Eggs
- 1 cup full fat coconut milk
- 1 tsp vanilla
- 1/4 tsp salt
- 1 tsp cinnamon
- 1 cup apple butter
Grease a 9 x 13 pan and set aside.
In a large bowl whisk together eggs, milk, salt, cinnamon, and vanilla together until completely combined.
Slice bread and then cut into half slices. Spread a bit of apple butter on each piece and arrange in the baking dish. Pour the egg mixture evenly over the bread, cover with plastic wrap and refrigerate overnight.
The next morning (or 8-10 hours later) preheat the oven to 350°F. Bake the french toast for about 30 minutes, then cover with tinfoil and bake for an additional 15 minutes.
Brush the remaining apple butter evenly over the top of the french toast. Place back in the oven and bake for 4-10 more minutes.
Allow to cool and then slice and enjoy! Top with maple syrup if desired.
