What you need to make healthy collagen smoothie bowls:

My favorite thing about these smoothies is how versatile they are. You can easily omit ginger or cinnamon if you don’t have them on hand, and you can change around the kind of milk or nut butter you add depending on your dietary preferences! Super easy peasy. Here’s the base of what you need, but feel free to customize it as you’d like and add whatever toppings your heart desires!

  • Frozen riced cauliflower – this helps thicken the smoothie without adding junk!
  • Coconut milk – or your milk of choice.
  • Pumpkin: These wouldn’t be pumpkin smoothies without pumpkin! Use pumpkin puree–NOT pie filling.
  • Unflavored collagen, to add protein, aid in gut health, and thicken the smoothie bowls.
  • Medjool dates: a healthy way to add sweetness with a side of potassium.
  • Honey – to add a bit of sweetness.
  • Nutmeg and Ginger: extra fall spices to add a boost of flavor.
  • Cinnamon: Pumpkin’s best friend!
  • Ice: Add more or less ice to alter the thickness of your smoothie

INGREDIENTS

  • 2 cups milk I used coconut milk
  • 2/3 cup pumpkin puree
  • 1/2 cup frozen cauliflower rice
  • 2 medjool dates pitted
  • 2 servings unflavored collagen 4 scoops
  • 2 tsp. cinnamon
  • 1 tsp nutmeg
  • 1/4 tsp ginger
  • 2 tsp honey
  • 1/2 cup ice cubes
  • Toppings: figs coconut flakes, chopped nuts, honey, or anything else you'd like!

INSTRUCTIONS

  1. Blend all ingredients in a high powered blender until well combined. Add more or less liquid as desired to alter the thickness.
  2. Divide into two bowls and top with desired toppings. Enjoy!
